Three different ways of putting berries in your cupcakes :)
Tres formas diferentes de ponerle moras a tus panques :)

I took my favorite cupcake recipe and made a few changes:

1
In this large pan I put the batter and added berries that I had earlier prepared by letting them rest in half a lemon's juice and a little sugar. I mixed the berries with the batter and put a few at the very top.

I baked it just as usual. Done! Berry cupcakes (or in this case...cake I guess :)
Lo horneé como siempre y listo! Panqué de moras :)

2
Slice any cupcake and make a super-quick homemade marmalade like this one.
or

With a berry cupcake or a regular one, (my boyfriend doesn't like berries, WHAT!?  yeah, I know. So I made a no-berry batch and gave him two vanilla ones), you can turn it berry with some icing!
I used half a cup of confectioners sugar and added lemon juice and blended berries until I got a good consistency and put it on top of a cupcake.

I feel like I can still perfect the recipe, but I did like how they turned out and they were easy to make and had a lovely color. I love to take a recipe and spice it up with some changes :3
Have a good kitchen day ;)

I originally made this jam to prepare a totally different recipe,
but it turned out so yummy and it was so easy to make, that I've decided to share it!
I has a mixture of bluberries, raspberries and blackberries.

* I know the measuring kitty says 1/2 a cup, I only had a few berries left! :p

Vas a necesitar:
Put the berries in a saucepan and while stirring them, bring them to a boil.
Incorporate the sugar and keep stirring them in low heat.
Do this for several minutes until you get your desired consistency
(not too runny, you'll know when it looks like regular jam).
When you're finished squeeze the half lemon's juice and mix it well.

This jam tastes totally different from store-bought jam, it tastes fresh and sweet :)
You can keep it in the fridge for up to a week
(I used this recycled mini marmalade jar to keep it)
You can also follow this same recipe using strawberries or any berry on its own!

I had mine with toast and a banana milkshake ;3
